Curly dock soup

500g of Curly dock
1 onion
1 tbsp of butter
1 tbsp of tomato paste
1 tsp of black pepper
1 tsp of chili powder
2 tsps of salt
½ cup of rice or bulgur

Sauté the chopped onions with the butter until brown. Add the tomato paste and stir for a couple of minutes. Add the washed and finely chopped curly dock. Cover with water and bring to a simmer. Bulgur or rice can be added to the soup if desired. Once the bulgur is cooked, remove from the heat and leave to rest for a few minutes. Serve warm with or without yoghurt dressing.
