Gotu Kola Soup

1 cup raw red rice
1 cuo Gotu Kola
3 cups coconut milk
2 cups water
1 tbsp ginger
2 cloves of garlic
1 tsp lemon juice
1 tsp salt

Add salt to a pot of water and bring to a boil. Wash the red rice, and put it in the water to cook. While the rice cooks, chop the Gotu Kola and crush it using a mortar and pestle. Finely chop the ginger and the garlic. Once the rice is cooked, add the coconut milk, crushed Gotu Kola, ginger, and garlic. Bring the soup to a boil, then add lemon juice and salt for seasoning.
