Sour Einkorn Pilaf

INGREDIENTS

1 cup Einkorn wheat
4 cups of water
1 medium onion
1 chili pepper
1 Charleston pepper
2 tbsp olive oil or 2 tbsp butter
1 tsp chili powder
1 tsp black pepper
⅓ tbsp salt
1 tbsp tomato paste
½ bunch of stinging nettle, dill, spring onion, mallow
¼ bunch of a fresh mint
5-6 vine leaves
Ayran (Yoghurt drink): Mix 1½ cups yoghurt
1½ cups water and 1 tbsp flour together

Preparation
Heat the half of the butter in a pan and sauté minced onions, chili pepper and Charleston pepper, stirring constantly. Add tomato paste and sauté some more. Pour 4 cups of water into the pan and boil. Then add washed einkorn wheat into the pan. Season with salt and then add all washed and chopped greens. When it’s ready add the ayran and keep stirring ingredients gently till the mixture comes to a boil again. In a separate sauce pan melt the rest of the butter and season it with chili powder and black pepper. It is desired for the mixture to have a slightly liquid consistency. By changing the amount of ayran you can adjust the level of sourness of the dish as you prefer. Let it to sit for a couple of minutes prior to serving.
