Wild Radish Salad

INGREDIENTS

1 bunch of wild radish

3 tablespoons of olive oil

2-3 cloves of garlic

Lemon juice

Salt

Preparation
Wash the leaves thoroughly and remove the older leaves along with the thicker and lower sections of stem. Start to boil a pan of water and meanwhile, roughly chop the leaves and young stems.
Once the water is boiling, plunge the leaves into the water and leave to blanch for only a few minutes. Remove the leaves to allow for cooling. Prepare the classic dressing with chopped garlic, olive oil and lemon.
