Egg-fried chichory

INGREDIENTS
500g of fresh chicory
1 onion
2 cloves of garlic
3 tomatoes
2 eggs
Olive oil
Salt
Black pepper
Chop the onion and garlic, add to a pan and sauté with olive oil. Then add the cleaned, washed and chopped chicory along with the chopped and peeled tomatoes. Leave to cook on low heat with the lid closed. After 15-20 minutes add salt. Once the herbs are soft, mix the beaten eggs and stir rapidly. Cook for 5-10 minutes and add black pepper. Serve hot. If desired, the dish can be served with yoghurt.
