Bulgur with Mallow

INGREDIENTS

2 cups of bulgur
1 bunch of mallow
1 onion
1 tbsp of tomato paste
Olive oil
Salt
Black pepper
3 cups of hot water

Preparation
Clean, wash and slightly boil the mallows, then drain using a colander and chop. Heat the olive oil in a saucepan and sauté the chopped onions. Add the slightly boiled and chopped mallows and tomato paste and cook for a few more minutes. Add the bulgur, salt and pepper this mixture and sauté for a minute or two. Add the hot water and cook on low heat until the water is absorbed. When cooked, leave the mixture to rest. If desired, this dish can be served with yogurt.
