Egg fried opopanax

INGREDIENTS

1 bunch of opopanax

1 onion

2 cloves of garlic

2-3 eggs

Olive oil

Ground red chili pepper

Black pepper

Salt

Preparation
Wash the herbs and boil them until they become soft. Remove them from the water, allow to cool and chop. In the meantime sauté the onion and garlic together in a saucepan with olive oil. When the onions have softened, add the chopped herbs, salt and red pepper. Stir and cook for 5 minutes. Add a beaten egg to the pan, sautéing until the eggs are cooked (a few minutes). Then sprinkle the mixture with black pepper and serve hot.
Note: If desired, this dish can be served with yoghurt.
