Purple Salsify Salad

INGREDIENTS

1 bunch of purple salsify
1 tomato
1 cucumber
2 green peppers
1 onion
2 tbsps olive oil
1 tbsp pomegranate juice
1 tsp salt 
1 tsp sumac
1 tsp thyme

Preparation:
Wash and chop the purple salsify. Put it in a bowl, then chop the tomatoes, cucumbers, peppers, and onions. Add the vegetables to the purple salsify. Then, in a small bowl, mix the olive oil, pomegranate juice, salt, sumac, and thyme. Use this mixture to dress the salad, and serve.
