Sorrel Salad

INGREDIENTS

1 bunch sorrel leaves
250g of any hard cheese (best if local)
2 cucumbers
Juice of half a lemon
Olive oil
2 tbsp of vinegar
6-7 walnuts
1-2 dried hot chili peppers
Salt

Preparation
Soak the sorrel in a vinegar and water mixture. Then, wash, dry and chop the sorrel and place it into a salad dish. Peel and cut the cucumber; cut the cheese into small cubes or coarsely grate. Add to the sorrel.
Prepare a dressing with lemon juice, salt and olive oil and pour the sauce over the salad. Add the chopped walnuts, sprinkle with chili pepper and serve.
Note: If desired, sesame or black cumin (Nigella) can also be used to add flavour.
